A Great Meal For Turkey Leftovers

This week, my husband smoked some turkey breasts for a home group dinner. This leftover turkey was sitting in the refrigerator this morning when the cloudy day cooking bug hit. I pulled out the crock pot to simmer a stew on this lazy Saturday.

Our turkey is smoked. It will make a delicious dish when mixed with vegetables and spices. Cut your leftover turkey into bite sized pieces. I used about three cups of turkey for my recipe. My husband loves lots of potatoes in his stews, so I used five medium sized red potatoes. Add three or four sliced carrots for color and taste.

In this particular recipe, I used a can of large lima beans, a can of black-eyed peas, a can of green beans and a few frozen peas, about a cup. I am currently out of corn, so this recipe does not have corn. Feel free to add a can of corn to your recipe.

In addition, add a package of stew mix and a brown gravy mix and stir well. Add a can of tomato soup and two cups of water. Add pepper and stir again. There should be no need for salt because the stew and brown gravy mixes are salty and will spice up the vegetables.

Cooking the Stew

Set the crock pot on high until the dish begins to bubble. At that time, adjust the heat to low and let it simmer until dinner time. Because the meat is already cooked, the cooking can be slow and should be ready in six hours or so.

Enjoy your recipe. It will be a hit when you serve it to your family. Fix it early in the morning, add a salad or bread, and serve your meal. Happy eating!
